This one sounds like a riff on: "When a man stops believing in God he doesn’t then believe in nothing, he believes anything."

I don't know if going down this road will help, but my version of the thought gets an extended answer from the American Chesterton Society:

Of course, Chesterton is famous for his paradoxes, so it's not surprising that one sounds like another!

It might be worth poking around their site to see if there is a source.
